There are two Chiles on a wine list. The first is the obvious one — Maipo Cabernet, Casablanca Sauvignon Blanc, Limarí Chardonnay - obtainable, fantastic product. The second is the Chile that doesn't quite get its due; the Itata Valley País and Cinsault, the wine producers reclaiming pre-colonial varieties from the southern coast. The latter brings something exceptional and new to the table, and something Los Bravos is deeply passionate about. Los Bravos is all about capturing and delivering unique quality unobtainable in Sydney.
Los Bravos isn't a Chilean restaurant in the strictest of senses — there's no dedicated Chilean kitchen delivering cazuela on demand. What we are is a pan-Latin home where Chile shows up where Chile always shows up: in the glass. Our wine list leans into South American producers including Chilean reds and whites that are rare and extremely hard to find. And what we do is bring imagination.
